My favorite among Jeff Dunham's many puppets is definitely Achmed, The Dead Terrorist. All bug eyes and bones, he releases hilarious, politically-incorrect one-liners and insults with gusto to the delight of the audience. Peanut is funny too, but Achmed's eyes, voice and those furry little eyebrows get me laughing just by looking at him.
